Things I Love Thursday // 10.17.13

  • Well Read Women: Portraits of Fiction's Most Beloved Heroines by Samantha Hahn ~ Not only do I love the illustrations and the quotes which give each character a voice as well as a presence, I love the book as a reference for the novels, plays, and poetry I have yet to consume. As Samantha Hahn writes, "I invite you into this book... to meet these heroines, befriend them, and in the process perhaps, learn about yourself... I hope you enjoy gazing into the eyes of all of the powerful, damaged, beautiful, and incandescent women in my book. I hope you follow them back to their original stores and come to see them in your own way too."

Looking Back and Moving Forward

 
Sometimes the most simple of gatherings bring about the best memories (sunshine, room to play, good food and nice wine, friends, bugs, and horses too). Flipping through the photos of our 3-week trip to Oregon over the summer, I came across so many moments and get-togethers that graced our time there with family and friends. It's nice to be in a place, emotionally, where I can look through these pictures (that so clearly represent many of the relationships and connections we made in Oregon) and not feel super sad. While we picked up and relocated across the country only 8 months ago, we are all making new connections, new friends, and finding our way. Honestly, it gets easier every day. There's really nothing "sad" about Charlotte (and that helps). This not being our first big relocation as a family, we came in knowing that what makes embracing this kind of change so special is not limited to the opportunity to meet new people, the prospect of discovering new places to explore, or even the deliciousness of new flavors and food we get to enjoy on this coast. Mostly, for me, it has been the opportunity to focus on and appreciate the beautiful life I have built with my family and the unique way we function together as a team that is most amazing. What a gift--to be given this chance to hold onto one another as we learn to grow and bloom in our new soil. So, in the spirit of new adventures: Cheers to staying connected to the friends you have, to extending yourself and making new friends, and to giving yourself and your loved ones some room to grow!

I look forward to sharing some of the other spectacular moments we enjoyed on our trip with y'all (wink) soon.

Recipe Review | Bruschetta

Before all the tasty tomatoes are gone for the season, I encourage you to try this easy and delicious recipe for bruschetta. The components are simple and the end result is always a crowd-pleaser. Just make sure your kissing partner has some too. This recipe is the result of many years of adjustments and additions. The quantities are estimates and you should taste as you go and make tweaks to suit your palate.

Tammy's Bruschetta
~
What you need:
2-3 cups ripe tomatoes (cherry, grape, roma, and some heirloom are ideal), diced
1-2 cloves fresh garlic, pressed through a mincer 
1 clove garlic, peeled and left whole
10-15 basil leaves, julienned (see photo above- stack leaves, roll like a cigar, and slice thinly)
1 cup cannellini (white kidney) beans, drained and rinsed
3-4 tablespoons olive oil, separated
salt and pepper, to taste
French baguette
goat cheese (optional)

What to do:
In a medium bowl, combine diced tomatoes, pressed garlic, basil, cannellini beans, and about 1-2 tablespoons olive oil (go lighter at first--you can add more later if you need to). Season with salt and pepper. Cover and set aside.

Preheat the broiler and slice your baguette (on the diagonal will give you a little more surface area to balance your bruschetta upon). Layer the bread on a cookie sheet and toast under the broiler until the edges brown and the bread becomes fragrant. Remove from the oven and flip each slice over. Toast the second side. (This side will NOT take as long as the first side--so keep you eye on it!)

Pour 1-2 tablespoons of olive oil in a small dish. With a fork, spear your remaining whole garlic clove; dip the garlic into the oil and while the bread is still warm from the oven, rub/scrape the garlic clove over one side of each toast.

To serve:
I always serve my tomato mixture separate from the baguette toasts. I find that if I assemble the bites too early (depending on the juiciness of the tomatoes) the bread can get soggy before people can enjoy it. In addition, I always place a small dish of soft goat cheese on the side of the baguette and encourage guests to first spread goat cheese on the toast and then to top with the bruschetta. The creaminess of the goat cheese and the cannellini beans are the secrets to the success of this crowd-pleaser. 

Along side a plate of savory-sweet crackers, triple cream, and a fruit chutney, this bruschetta makes for a delightful, almost-effortless, late-afternoon gathering with family and friends. Cheers!

  • Volunteering at the girls' school to be a "learning buddy" to another student (first grader) who needs a little extra help each week ~ This program is designed to help the kids, but I have to wonder if the adults involved are getting just as much back from participating. 
  • Tackling the storage closet and transforming it into a "cottage" for the girls and their dolls 

  • That moment in your yoga or barre class when the instructor comes over and quietly and gently pushes you into a deeper stretch
  • "Granny" and "Frida Kahlo" from this list of hysterical kid costumes 
  • Our very own subscription to Garden & Gun (A most thoughtful gift from the first Charlotte native we met in North Carolina!) 
  • Making over the porch for FALL... (pics coming soon)
  • Surprising my hubby with an office makeover while he was out of town (Those violins are original art pieces that the girls gave G for Christmas.)

Prepping Crock Pot Freezer Meals

One of the best ideas I've come across and put into our family routine is to shop, prep, and freeze-ahead crock pot meals for those busy nights when I know I just won't have time to get a good meal on the table. I find that Fall is an especially great time to bust out the crock pot because the days are cooler (and often wet) and a nice hot plate of comfort food always sounds especially pleasing. 

I try to prep between 3-6 meals at a time. Depending on your chopping skills and ambition, this task can take between 1-2 hours (usually) but when you're finished you'll have several meals at your fingertips and ready to cook when you need them.

Start by getting your groceries, spices, and kitchen gear (measuring cups and spoons, cutting boards/knives, pan for browning, etc.) ready.
Next, label and make the necessary notations on your gallon FREEZER bags. I would suggest printing your recipes and having them readily accessible as you assemble your meals. When you're working between several recipes at a time, it's easier to get "lost" along the way--so pay attention. 
After the bags are labeled, I like to get all of my proteins in their bags before adding additional ingredients. Having this weight in the bottom keeps the bag from tipping over. In addition, once the meat is in the bag, you can change out your knife and cutting board and get your hands clean again--knowing you'll only be working with veggies past this point. Once your protein-filled bags are lined up on the counter, you can add ingredients in a more efficient way (for example: chop all the onions at once and then portion them out between the meals). 

When you go to place your meals in the freezer, be sure to lay them as flat as possible. Not only will this save you freezer space, it will also facilitate the thawing process later.
To get you started, here is a recipe for Cranberry Pork Roast that works well as a "freeze-ahead" meal. 

Tips that will save you time without sacrificing flavor:
  1. Don't use jarred garlic. I know mincing garlic can be a sticky, messy process but processed and jarred garlic does not come close to the delicious flavor that fresh garlic provides. Instead, simply smash the garlic cloves with the side of the knife, peel the paper off and toss the whole clove in the recipe. Because you're cooking in the crock pot, the flavor has lots of time to mellow and harmonize with the rest of the ingredients. Just be sure you fish out the whole garlic cloves before serving!
  2. The same goes for fresh grated ginger. Have you tried grating ginger lately? It's time-consuming and difficult and what's left over in your hand is typically way more abundant than what you've managed to grate (or juice). The tubed ginger will do in a pinch if you can't find ginger root (it's not nearly as offensive as jarred garlic). A cheaper and more flavorful option is to peel the root using the edge of a spoon (just face the spoon toward the root and scrape it gently along the outside of the root until the skin is removed) and then to slice the root into disks. Add these to your recipe but again, remember to remove them before serving. 

If any of YOU have a tip for ME, I'd LOVE to hear it. Particularly, I'd be so grateful if someone could let me know how to chop onions without this happening. I swear it's gotten 10 times worse since my LASIK surgery. I'm always a MESS after prepping onions (even innocent little green onions and shallots!).

Things I Love Thursday // 09.26.13

  • The sound of the girls giggling and whispering to one another after lights-out ~ I can't even get irritated that they're not sleeping. The fact that they are having such a great time with one another is just too precious.
  • Every Day Counts: The art of making every day a special day ~ An IKEA coffee table book I just came across. It's full of beautiful pictures, great advice on entertaining, crafty ideas, and recipes. It's also pretty cheeky with the captions which is fun. AND it's only $8 if you have a (free) Family Membership. 
  • How to Get Flat Abs, Have Amazing Sex, and Rule the World in 8 Easy Steps ~ A great article about expectations and chasing the media-driven idea that "I will be happy when..." by Kate Bartolotta. Definitely worth the few minutes it will take you to read it. I've been thinking about this article off and on all week. Good stuff.
  • The Storybird website for writing books and poems ~ If you have school-aged children, I highly recommend this as an alternative (or addition) to consumer-laced, self-promoting "kid websites" like Disney or Nick Junior. I am even thinking about registering as a user myself and playing around with a story or two... 
  • iOS 7 ~ Listen, life is not static. Embrace change and get to the good stuff: enjoying this beautiful and user-friendly update. I'm not even sure about half the $hit my phone can do now--but I'm happy about what I've seen and I'm excited to figure the rest out. What I've played around with so far is fantastic! 
  • King of Pops popsicles ~ I've had the pleasure of Raspberry Margarita, Salted Chocolate, and Banana Pudding. Looking forward to Grapefruit Mint, Plum Ginger, and Vanilla Whopper (to name a few). 
  • Having Greg's dad (otherwise known as, Papa Mike) here visiting us this weekend
  • Hosting play dates for both girls this week and finding that the new classroom friends they've made this year are such great girls :)
  • My cozy Gap moccasins ~ that have been great "between season," daytime, go-to pair of shoes. They really do feel a lot like slippers. 
  • Busting out the crock pot again for late-evening, soccer practice, weekday-night meals ~ Tonight was Mongolian Beef over rice with stir-fried broccoli florets (a meal I prepared on Monday and stuck in the freezer along with Chicken and Dumplings, Thai Red Curry Beef, Broccoli Beef, Sloppy Joes, Pasta e Fagioli, Vietnamese Roasted Chicken, BBQ Beef and Beans, and Coq au vin). Have I mentioned this system of shopping, prepping, and freezing crock pot meals that my girlfriend Gretchen and I have been doing for about a year now? It's amazing. And 'tis the season to get busy with the prepping!
